White Chocolate Chip & Raspberry Muffins



Today I made this brand new recipe that I am very excited about. Its pretty simple and straightforward. The only things I needed to purchase that weren't already in my cupboard were whole milk, white chocolate chips and fresh raspberries. Not too shabby. I like easy.

First turn on the oven to 400F and put your paper muffin cups in the pan.

Now mix all the dry ingredients together. Then - the only thing I've never done before - you take chilled butter and grate it into the dry ingredients. Still super easy. Then stir it all up.

Next you mix the wet ingredients in a separate small dish. Make a well in the dry ingredients, pour in the wet and gently mix it all up.

Then you fold in the raspberries and white chocolate chips at the end. Finally add the mixture to the muffin cups, and top with remaining white chocolate chips.


Place the muffins in the oven for 20 minutes and tend to your now very unhappy child.

When they are done they will be a pretty golden brown on top and make your house smell like muffin heaven. They should look something like this: 



Yum yum! At approximately 246 calories per muffin it's not too hard on the diet. That is if you can eat only one.

Ingredients:
2 cups of all purpose flour
1 tablespoon of baking powder
1/2 cup of granulated sugar
6 tablespoons of salted butter; chilled and grated
1 large egg
3/4 cup of whole milk
1 1/2 cups of fresh raspberries 
3/4 cup of white chocolate chips -- I added 1/2 cup to muffins, 1/4 cup on top


Recipe yields 12 muffins.
