Mocha Chip Scones

Okay, so we all know how much I love easy peasy recipes right? Well I will tell you up front - this is not one of those. It's still fairly straightforward and simple, but requires a bit more effort and fore-thought than I always put in my recipes. But let me tell you. These are WORTH IT. You won't be sad you put the effort in. 

So I started out by popping a stick of unsalted butter in the freezer and forgetting about it over night. But really you need 1 stick of frozen unsalted butter. So do this ahead of time. 

Then when you're ready to start, make yourself a nice strong cup of coffee. But DONT drink it. I know it's hard, I know your darned children keep waking up before the crack of dawn. But seriously. Don't. Do. It. Set aside to cool down. 

Also, now is a great time to set the oven to 400. 

Now we can get cracking. Toss all the dry ingredients in a big bowl. Stir until mixed. 


Now we pull out that frozen stick of butter and grate it into the bowl. Mmm butter. Press the butter into the flour mixture with your hands. It should have some course-ness to it. Once mixed toss in your chocolate chips as well. 


Now we mix up the sour cream, eggs and coffee into a small bowl. Whisk until smooth. Once smooth dump it into your big bowl. 


Looks appetizing no? Just wait for it...

Stir it all up until it resembles a sticky batter. Stick your hands in and mix it the rest of the way with your hands. It will be very sticky. Try to make a big ball. Then place it on a lightly floured surface. 


At this point I added some flour to my rolling pin and rolled it out nice and flat. However you do not *have* to do this. Some people just shape it with their hands and are good to go. But over here we like perfection. What can ya do?!
Roll it out and then I used a big chefs knife to cut it into wedges. 


At this point you can just stick it in the oven and bake but I wanted them smaller so I cut each wedge in half so I ended up with 16 "half" scones. 

Go ahead and stick your scones on a parchment paper lined cooking sheet and put in the oven. 

At 15 mins mine looked like this:


Nice and golden brown. Finally as these cooled I went ahead and made the glaze.  

In a small bowl stir up your powdered sugar and coffee. Melt your chocolate in the microwave. When melted add to sugar/coffee mix. Keep stirring until it's all nice and blended. 

Now you could at this point put your icing in a Baggie, cut off the tip and go to town. But that seemed like too much effort, so I used a spoon to sprinkle the glaze over the scones. I think they turned out just beautiful enough. After all, they are going straight into my tummy. 


Just incredible. You will have to tell me if you too think these were totally worth the effort of not! But in my book, they hit the top! See you soon! 



Ingredients: 

scones:
2 ¼ cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon sea salt
8 tablespoons unsalted butter, frozen
1 cup semisweet chocolate chips
1/2 cup sour cream
1/2 cup strong coffee, room temperature
1 large egg

glaze:
1 ½ cups confectioners’ sugar
2 ounces unsweetened chocolate, melted (I used 1 ounce semi sweet, 1 ounce of unsweetened)
1/4 cup strong coffee

Chocolate Cake Mix Chunky cookies

These are the perfect oh-crap-I-totally-forgot-to-buy-the-ingredients-I-needed cookies.


The recipe is very simple. Start by setting your oven to 350. 


Next let's add the cake mix, brown sugar, eggs, vanilla and melted butter to a bowl. Stir. 

Then you add in the chocolate chip and nuts. Here's the lovely mix at that point:


Now all that's left to do is drop rounded tablespoons onto a cookie sheet and bake! 


Side note, I used parchment paper but you could always just use an greased pan. Whatever floats your boat. 

Bake for 12 minutes per batch. They might seem slightly underdone but will be perfect once they sit for a few minutes.

1 box Dark Chocolate Fudge cake mix 
2 eggs
1 stick (1/2 cup) butter (I used salted)
1/4 cup brown sugar 
1 tsp vanilla 
1 cup semi sweet chocolate chips 
1/2 cup chopped pecans or walnuts (I used walnuts)
